This is the oldest recipe we have been able to find for producing mead, we have excluded the rotted crab apples as we think that modern taste buds are not into such flavours. Mead has been made since time began. Mead was found in the tomb of tutankhamun, it certainly was an essential part of the kit taken into battle with the romans. Monks seem to have been weaned on Mead for many hundreds of years
